Campus Dining Competes in Tournament of Champions
Vanderbilt Campus Dining chefs Joshua Smith and Grayson Holland showcased their culinary prowess at the UMass Chef Conference Tournament of Champions this week. The cooking competition was hosted by chef Jet Tila and followed a format similar to Food Network competitions. Chefs Josh and Grayson competed as a team against six other colleges and universities under a 30-minute time frame with unique challenges and a randomizer wheel that dictated the proteins, produce, equipment, and cooking styles.
During the first challenge, our campus dining chefs created a lobster ceviche over a black garlic vinaigrette watercress salad, and a Serbian-inspired cevapi served over Mediterranean couscous with succotash for the second challenge. Their impressive performance highlights the exceptional talent within Vanderbilt’s culinary team.
