Vanderbilt Campus Dining Joins The Menus of Change University Research Collaborative

Nashville, TN, September, 2017 Vanderbilt University Campus Dining is proud to announce partnership with Menus of Change University Research Collaborative (MCURC). The initiative was founded and is jointly led by Stanford University, and The Culinary Institute of America, the world’s premier culinary college. It represents an inspiring next step in the evolution of the Menus of Change efforts.

Members of the Collaborative include a group of leaders from colleges and universities nationwide who are deeply committed to advancing plant-forward menus as a cultural norm. Together, these trailblazers are developing a national agenda for interdisciplinary research to better understand and improve our food system, as well as training materials and best practices for operationalizing the Principles of Healthy, Sustainable Menus.

Vanderbilt Campus Dining representatives will be attending the third annual MCURC All-Member Meeting, which is taking place Oct. 9 & 10, 2017 at UCLA. “We are excited to be a contributing member of the Menus of Change Collaborative.  The organization will allow us to more actively partner with scholars, foodservice business leaders, and chefs to expand our healthy, sustainable, and plant forward offerings at Vanderbilt University,” said Campus Dining Executive Director, David ter Kuile.
