Sustainability

At Vanderbilt Campus Dining, we take responsibility for doing our part to support the wellbeing of our guests and for supporting the health of our environment. We are committed to sustainable dining practices and making a positive impact on your environment, community and wellbeing.

Our Initiatives

Student-Led Initiatives

Vanderbilt Campus Dining has introduced climate impact labeling at E. Bronson Ingram Dining Hall to promote sustainable food choices and educate students on environmental impact. Developed by students in Dr. Lori Troxel’s Sustainable Development class, the system categorizes menu items by sustainability impact, helping diners make informed decisions that contribute to a more eco-friendly campus.

Menus of Change Research Collaborative

We are proud members of the Menus of Change University Research Collaborative, a network advancing healthier, sustainable food choices through university-led research, education, and collaboration across academics, dining, and athletics.

Local Food Suppliers

Vanderbilt Campus Dining partners with local food suppliers to provide fresh, sustainable, and community-focused dining options for students and staff making your food so local, it still has an accent!

Reducing Food Waste

Vanderbilt Campus Dining collaborates with FutureVU Sustainability, Topanga, and The Compost Company to implement innovative waste reduction, composting, and sustainable food management practices that promote environmental stewardship and enhance campus operations.

Community Support

Vanderbilt Campus Dining is committed to sustainability and community support by donating surplus food to local non-profits, reducing waste while helping those in need. Through partnerships with organizations like the Nashville Rescue Mission, Room in the Inn, and Operation Stand Down, they provide consistent food donations, reinforcing their dedication to both environmental responsibility and food security in Middle Tennessee.

Reducing Plastic Waste

Vanderbilt University is committed to achieving carbon neutrality by 2050 through renewable energy, waste reduction, and initiatives like eliminating single-use plastics in dining facilities, supported by increased water bottle filling stations to reduce over 390,000 plastic
bottles annually.
